Choc Chip Cookies with Banana Flour - Say what?
I am yet to have a flour for baking that is actually good for your gut till now. Even the gluten free combos flours have corn or soy or something genetically modified that just never sat well with me. I bet I am not the only person sick of feeling bloated and guilty after sniffing (ok eating just 1) carb filled cookie. So, I went hunting for another option.
Green banana flour ticks all the checklists for people looking after their health and wellness. It is especially good for people with food intolerances, leaky gut and it's even low fodmap and vegan friendly. So for people with bloating or sensitive guts this is for you. The best thing is, it doesn't taste like bananas at all. Hooray!!
Green banana flour is very high in resistant starch, making it a supreme option for gut and hormone health. Resistant starch produces a byproduct called butyrate in our large intestine which feeds healthy bacteria and reduces the bad bugs. Prebiotics is another term for the resistant starch that feeds healthy bacteria. Some health benefits that butyrate can do is help absorb vitamins and minerals, reduce inflammation and regulate the immune system, making it a good one for autoimmune conditions.
So, the recipe for today, can be made to be vegan friendly. Replace the grass fed butter, with coconut oil and the eggs for either mashed banana or 1 tablespoon of chia seeds to 3 tablespoons of water and sit for 5mins.
Recipe
Choc chip Cookies with Green Banana Flour
Makes aprox 16
Ingredients
11/2 cups Green Banana flour
1/2 cup almond flour
1/4 cup coconut sugar
1/4 cup maple syrup
1/2 cup dark chocolate chips (v)
1 egg or 1 mashed banana (V)
1/4 tsp bicarb soda
1/4 tsp baking soda
1/2 tsp cinnamon
120g grass fed butter or coconut oil (V)
Method
1.Preheat oven to 180 degrees C
2. Add dry ingredients together in a bowl except for the coconut sugar
3. Add wet ingredients to another bowl with the coconut sugar
4. Mix the wet ingredients with the dry
5. Roll the dough and use a cookie cutter for fun shapes
6. Pop on a non stick tray or silicon tray and bake in oven for 10 min
7. Allow to cool before snacking away!
